Kani cucumber wasabi Salad

     
      Last Sunday, I was teaching one of my emergency cooking classes.  That led me to meet Chef Megan.  She is a healthy Lifestyle consultant and chef who teaching cooking class at cook's warehouse (the same place I teach).  We made a pretty good duo.  She told me that she teaches at Leaning ladder.  It is a specialty olive oil and Vinegar store in Downtown Woodstock.  I was so surprised to hear the place like that so close to my house, but I never knew about it!!!  The next day I made my way to that store.



      When I got into the store.  I felt like a kid in a candy store.  OMG they are too many things to taste and try.  They have a beautiful kitchen for the cooking class.  I was talking to the nice lady who was at the store.  She told me they have all kinds of interesting stuff.  After some talking and trying.  I decided to pick up some of their Honey ginger vinegar and sesame oil (I was out of it at home).  I came back home like a kid getting a new toy.  I needed to try new recipes with it.  I've planned to make sushi and cucumber salad.  I usually make sushi at home all of the time because my family LOVES sushi.  My kids can eat 2 California rolls each and all of my kids love to make them too.  So today we do Sushi day.
     I always love cucumber and Kani (imitation crab meat) salad at a Sushi place.  I decided to shake it up a little by add some wasabi in the dressing.  This will not be the authentic recipe but it will be fusion in my version recipes.  This dish is very healthy and light it is perfect for my diet right now. The result WOOHOO, it's so good!!!

     I start with cutting my cucumber in the Julienne (this means long strips like match sticks) then I shredded Kani (imitation crab meat) by hand into strips.  I placed it on a serving bowl, then I added my new Honey ginger vinegar with a pinch of salt, a bit of wasabi (up to you like) and some sesame oil.  I whisked it up until it combined then poured it all over my salad.  Finish with a sprinkle of toasted sesame seed.  That's it!!!  WOW it's really kicking my sinus WOOHOO!!!


Kani cucumber salad

Ingredients
1 cucumber
5 Kani (imitation crab meat stick)
1/4 cup Honey ginger vinegar (I found my at Leaning ladder)
1/4 tsp. wasabi (or more)
1/8 tsp. salt
1/2 tsp. sesame oil
1 tsp. toasted sesame seed. (or more)

Cooking instructions
1. Cut Cucumber into matchstick (Julienne cut) then shredded Kani into strip place the cucumber on the serving bowl then add Kani.
2. In the mixing bowl add Honey ginger vinergar, wasabi, sesame oil and salt whisked until it combined.
3. Pour the dressing top of the salad then sprinkle some toasted sesame seeds.
